1 portion = 1 plaited loaf (850-900 g)
Ingredients
- 20 g fresh yeast
- 1 tablespoon sugar
- 250 ml milk
- 500 g flour
- 1 teaspoon salt
- 4-8 g Matcha (1 tsp = 2.5 g)
- 60 g butter
- 1 egg yolk
- 2 tablespoons sesame seeds
Method
- Add the yeast and sugar to the lukewarm milk and stir until everything has dissolved. Let the mixture stand for 5-10 minutes until it becomes foamy.
- In a large bowl, mix the flour, salt and matcha powder. Add the soft butter in pieces, pour in the yeast mixture and knead everything into a smooth, elastic dough.
- Form the dough into a ball, place it in a bowl, cover and let it rise in a warm place for about 1 hour until it has doubled in size.
- Place the dough on a lightly floured surface and divide it into three equal-sized strands. Roll each strand to about 40 cm long. Braid the strands into a plait and then shape it into a snail shape by rolling it up into a spiral. Press the end lightly so that the rose braid remains stable.
- Place the plait on a baking tray lined with baking paper and let it rest for another 30 minutes.
- Whisk the egg with a little milk and spread it evenly over the plait. Sprinkle the sesame seeds on top.
- Preheat the oven to 180 °C (top/bottom heat) or 160 °C (fan oven) and bake the plait for 25-30 minutes until golden brown and the sesame seeds are lightly toasted.
- Let the plait cool and cut it into slices. Enjoy it plain or with butter and honey.
