Matcha Lemon Dressing

This matcha lemon dressing brings a refreshing and special, slightly tart note to the plate. The harmonious combination of high-quality matcha and fresh lemon juice gives salads a fine, balanced aroma that goes perfectly with crunchy ingredients such as rocket, walnuts or pomegranate seeds.

Matcha Zitronen Dressing
1 portion = 2-3 salads

Ingredients

  • 4 g Matcha (1 tsp = 2.5 g)
  • 2 tablespoons lemon juice
  • 1 teaspoon agave syrup, maple syrup or similar
  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • salt and pepper

Method

  1. Place the matcha powder in a small bowl and add the lemon juice. Stir thoroughly until the powder is dissolved and a smooth, lump-free paste forms.
  2. Add the olive oil, apple cider vinegar and agave syrup, maple syrup or other sweetener to taste. Stir until the dressing has a smooth consistency.
  3. Season with salt and pepper and add mustard if desired to give the dressing an extra flavor.
  4. Drizzle the Matcha Lemon Dressing over winter salads and enjoy with fresh or roasted ingredients such as lamb's lettuce, pomegranate and walnuts.
