Ingredients
- 4 g Matcha (1 tsp = 2.5 g)
- 2 tablespoons lemon juice
- 1 teaspoon agave syrup, maple syrup or similar
- 3 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- salt and pepper
Method
- Place the matcha powder in a small bowl and add the lemon juice. Stir thoroughly until the powder is dissolved and a smooth, lump-free paste forms.
- Add the olive oil, apple cider vinegar and agave syrup, maple syrup or other sweetener to taste. Stir until the dressing has a smooth consistency.
- Season with salt and pepper and add mustard if desired to give the dressing an extra flavor.
- Drizzle the Matcha Lemon Dressing over winter salads and enjoy with fresh or roasted ingredients such as lamb's lettuce, pomegranate and walnuts.
